I am such a lover of yoghurt, granola and fruit in the morning and I have either that or toast most days of the week! However, in the winter I do love to have something warm to warm me up on a frosty morning and cold yoghurt and granola just doesn’t quite cut it. These easy apple breakfast parfaits are the perfect solution to that. Warm, maple cinnamon stewed apples layered up with yoghurt and crunchy granola. So so good!
You can really get creative with these and change around the yoghurt or granola you use, you could even use pear or banana instead of apple. I simply use whatever granola I have in the house, which is usually a homemade variety! Check out my Chocolate Hazelnut Granola or Christmas Granola for some yummy inspiration.
As far as yoghurt goes, I always choose a Greek or Skyr yoghurt as the extra protein makes it much more filling and nutritious! My absolute favourites are the Siggi’s vanilla, I love that they are vanilla flavoured without a ton of sugar and they are just so good.
Apple Yoghurt Parfaits
- 2 150g pots yoghurt roughly 1 1/4 cups
- 1 apple
- 2 tsp maple syrup
- 1 tsp cinnamon
- 6 tbsp granola
- Core and dice the apple.
- Add the apple to a saucepan with the maple syrup and cinnamon. Cook over low heat until softened and caramelised, roughly 5 minutes. Add a splash of water if it starts getting too dry.
- Layer up with the yoghurt and granola in two jars and enjoy!
