Preheat the oven to 180c. Line a baking tray with a baking mat or parchment paper.
Beat together the butter and sugar until light and fluffy.
Beat in the egg, followed by the vanilla.
In another bowl, stir together the flour, oats, cacao, baking soda and salt.
Fold the dry ingredients into the wet until mixed evenly.
Fold through the chopped cherries and chocolate chips.
Using an ice cream scoop or a tablespoon, scoop out a heaped tablespoonful of dough per cookie and place evenly on the baking sheet.
Bake for 10-12 minutes.
Allow to cool for 5 minutes on the tray before sliding on to a cooling rack to cool completely.
